A few weeks ago, my husband bought lobster for dinner - and bought the biggest ones I had ever seen.
The first lobster I was unable to finish in one sitting... there's a first time for everything haha
So for the first time in history, we had leftover lobster meat...
We froze the meat and after a few weeks of restraint, we decided to break into it to make gourmet mac and cheese.
Lobstah mac + cheese with a breadcrumb topping from the dutch oven and plated on fancy kids dinnerware ;)...
LOBSTAH MAC + CHEESE
Protein: lobster
Prep Time: 30 minutes
Cook Time: 25 minutes to get bubbly
INGREDIENTS (14):
lobster (1 c. of meat)
macaroni (8 oz. box)
butter (6 tbsp.)
parsley (1.5 tbsp.)
green onion (3-4 stalks)
flour (3 tbsp.)
milk (2.5 c.)
egg (1)
cheese (2 c.)
nutmeg (1/2 tsp.)
salt and pepper to taste
breadcrumbs (3/4 c.)
olive oil / nonstick spray
INSTRUCTIONS:
-Preheat oven to 350F.
- Grease a 2 quart baking dish or dutch oven and set aside.
-Cook pasta until al dente and drain.
Add 1 tbsp of butter to the cooked pasta to prevent it from sticking together.
***While pasta is cooking, chop parsley, green onion, and lobster chunks.
-Melt 3 tablespoons of butter in a saucepan- then add chopped parsley and onion.
-Cook for 1-2 minutes, then stir in flour. Make sure you continually stir this mixture as it forms a clump.
-Cook for another minute, then add the milk slowly, stirring constantly and breaking up the clump of flour, butter and herbs until the mixture thickens.
-Lightly whisk the egg in a cup and slowly pour into the saucepan, again stirring well to blend.
-Add 1 1/2 cups of the shredded cheese, salt, pepper, and nutmeg to the saucepan.
Continue to stir until the cheese is fully melted.
-Pour sauce onto the cooked macaroni and then gently fold in the lobster meat.
-Transfer to the greased baking dish.
-Sprinkle the remaining 1/2 c. (or more!) of cheese on top.
-Melt 2 tbsp. of butter and combine with 3/4 c. breadcrumbs.
-Mix together, then sprinkle the breadcrumb/butter mixture evenly on top.
-Bake for 25 minutes or until the casserole is bubbling and the top layer is browned!
-Dig in!
